Easy, Peasy Veggie Soup!
This is a quick and easy recipe for any weeknight meal! It's full of nutrients, flavour and comfort! The best thing on a cold day is some soup and crusty bread, I don't know about you but crusty bread smothered with garlic and olive oil SCREAMS my name lol! Anywho, heres the recipe and remember, you may add any veg that I haven't also any hot sauce or other spices as well. With cooking always remember it's your masterpiece. Enjoy it and love it. Red potatoes (sliced in half) (I used about 8 mini ones, 4 regular sized ones are perfect)
1 Onion (roughly chopped)
2 Carrots (roughly chopped)
2 Celery Stalks (roughly
2-3 cloves of garlic (rough chop)
4-6 cups of spinach (you can probably use frozen too, I had fresh so I used it up)
1 piece of parmigiano reggiano rind (leave it in there, it basically disintegrates) You can purchase these at Fortino's, Longo's in the cheese section. *optional*
1-2 chicken bouillon cubes (add as much water to fill up the pot), or you can use your flavored broth (usually 2 quarts) or bone broth.
2-3 cups of dry pastina (small pasta) Add this if you want to have some pasta added to your soup.
You can add or omit any of these veggies, but please the carrots, celery, garlic and onion should be your staple. They offer delicious flavours and nutrients. I have added in: zucchini, sweet potatoes, swiss chard, beans (oh yes add white kidney beans if you have, so delicious) you can even add a tomato, some tomato paste to the mix as well. The possibilities are endless, make this your own masterpiece , you can even add your protein: chicken, beef, tofu etc.
Pour some Olive oil into a pot, you are going to make your onions, carrots, celery, garlic, potatoes and spinach sweat a bit have on low-medium heat. Also throw in your parm rind and your bouillon cube (if you aren't using liquid broth). Once veg is sweating, pour in liquid (broth) and turn heat up until boiling point, once it starts to boil turn heat down to low and simmer for 2-3 hours.
Get your immersion blender out and begin to immerse blender into soup to emulsify. This will thicken soup. Once soup is emulsified add dry pasta to soup and cook for 7-9 minutes.
While your pasta is cooking, get some bread, lather it with some olive oil, broil it on low in the oven (watch it, or else it might burn). Take it out after 5-6 minutes and smother some fresh garlic on it and there you go folks you got some too die for garlic bread!
Serve soup with some crusty bread and vino!
