This magic sauce of mine!
Ok so this picture is NOT mine, no because when I was making my sauce last week I forgot to snap a picture, but it looks pretty rustic and real so that it was I decided to borrow this from https://cooking.nytimes.com.
A friend of mine messaged me today on Instagram and asked me for the recipe!
So here it is my lovelies...and remember you may omit or add ANYTHING you'd like, sauce is supposed to be your masterpiece with a little this and that make it your own! I promise you you and your fam will just LOVE it!
2 jars of stewed tomatoes (Mutti, Aurora, Emma, Molisana, or if you have your own use that!)
1 chicken/beef/veggie bouillon cube ( any flavor you'd like and yes I use a bouillon cube! It cuts the acidity of the tomatoes, some use sugar)
1 onion (rough chopped)
2 cloves of garlic (rough chopped)
1 carrot (peeled and cut in half)
1-2 celery stalks (cut in halves)
olive oil (I eyeball everything, you should do the same)
a piece of a parmigiano reggiano rind (you can buy them at Fortinos in the cheese section)
Put some Olive oil in the pot, throw the veg in, allow the onion to sweat a bit but not burn. Add the rind, basil, bouillon cube and the stewed tomatoes. Bring to a boil, turn down heat to love and allow sauce to simmer for about 2 + hours. Taste the sauce throughout and add some salt when need be. Then THIS is where the magic happens, grab your immersion blender (what is that?!) i'll show you below...
Turn off your stove, place the immersion blender in the sauce and slowly immerse into sauce up and down what this does is thicken the sauce and emulsify all the flavors of the veg!
Once you emulsify it let it simmer for about 10-15 minutes, then you're good to go! Pour it over your favourite pasta or you can just dip your panino/bread right into the pot (my favorite past time, actually lets be honest I do it now!).
